Cafeterias are the highest-usage scenario for dumbwaiters — dense peak periods during three meal services, heavy and bulky food items. The selection logic is completely different from restaurants or hotels. This article provides selection plans for four scenarios: school cafeterias, factory canteens, hospital nutrition kitchens, and government/institutional cafeterias.

1. Cafeteria vs. Restaurant: Completely Different Selection Logic

DimensionRestaurant DumbwaiterCafeteria Dumbwaiter
Single-trip load1-2 plates (light)Large food pans + rice buckets + soup pots (heavy)
Peak frequencyMediumExtremely high (continuous operation within 30 min)
Capacity50-100kg200-500kg
TypeWindow-type (carrying plates)Floor-level (rolling carts)
Voltage220V380V
Duty ratingNormalHeavy-duty (continuous duty)
Key takeaway: The core of cafeteria dumbwaiter selection is sufficient capacity + cart access + 380V three-phase + heavy-duty motor. The restaurant approach (50kg window-type, 220V) is entirely inadequate for cafeterias.

2. Calculating Capacity by Diner Count

The first formula for cafeteria dumbwaiter selection: Capacity ≈ Peak single-trip load × 1.5 safety margin. And peak single-trip load depends on diner count.

Diner CountPeak Single-Trip LoadRecommended CapacityCar Dimensions
100-300~80kg100-200kg800×800mm
300-500~150kg200-300kg1000×1000mm
500-1000~250kg300-500kg1000×1200mm
1000-2000~350kg500kg (dual units or larger model)1200×1400mm
2000+Consider 2 units300kg × 2 unitsEach 1000×1000mm
Why leave a 1.5x margin? During peak periods, the dumbwaiter may make 20+ trips within 30 minutes. The motor needs thermal headroom for continuous operation. Running at 100% full load continuously will trigger thermal protection shutdown. Leaving margin ensures stable operation.

3. Selection Plans for Four Scenarios

Scenario 1: School Cafeteria

CharacteristicsFixed three-meal peaks, nutrition balance requires food warming, high safety requirements (student operation)
Capacity300-student school: 200kg / 500-student school: 300kg / 1000-student school: 500kg
TypeFloor-level (cart access)
Door typeAutomatic sliding door + child safety interlock
Material304 stainless steel (food-grade + material certificate)
Add-onsUV-C disinfection lamp + anti-slip floor plate
Voltage380V three-phase

Scenario 2: Factory Canteen

CharacteristicsShift-based concentration (lunch peak extremely dense), bulk food items, budget-sensitive
Capacity300-500kg (see table by headcount)
TypeFloor-level (large food carts)
Door typeAutomatic sliding door (efficiency first)
Material304 stainless steel (high-frequency durability)
Add-onsHeavy-duty motor + reinforced brake
Voltage380V three-phase

Scenario 3: Hospital Nutrition Kitchen

CharacteristicsMeal carts delivered to wards, high cleanliness requirements, some need food warming
Capacity100-300kg
TypeFloor-level (meal carts in and out)
Door typeAutomatic swing door (best sealing)
Material316 stainless steel (hospital-grade, disinfectant-resistant)
Add-onsUV disinfection lamp + temperature-controlled warming + sealed door
Voltage380V three-phase

Scenario 4: Government / Corporate Cafeteria

CharacteristicsConcentrated lunch peak, medium scale, emphasis on quality and noise control
Capacity200-300kg
TypeFloor-level / window-type combination (floor-level for kitchen output, window-type for dining floor)
Door typeAutomatic sliding door
Material304 stainless steel
Add-onsLow noise ≤ 55dB (office area)
Voltage220V / 380V (by capacity)

4. Floor-Level vs. Window-Type — Which for Cafeterias?

Cafeterias should prioritize floor-level dumbwaiters, for the following reasons:

  1. Cafeteria food output uses carts (large food pans + rice buckets + soup pots), requiring carts to roll directly in and out
  2. Floor-level car is flush with the ground, with a stainless steel ramp transition for barrier-free cart access
  3. Window-type (70-80cm above floor) only allows manual carrying — impossible to keep up during cafeteria peak periods

Exception: If the cafeteria is on a floor without a basement (e.g., second-floor kitchen serving first-floor dining area), a combination of window-type + floor-level can be used — floor-level for kitchen cart loading, window-type for dining floor plate pickup.

5. Installation Key Points for Cafeteria Dumbwaiters

No-pit solution: GOELEV's 100-200kg models can be configured with shallow pit (150mm) or even zero-pit, suitable for old cafeteria renovations — no excavation, no damage to existing floors, 3-day installation.

6. Cafeteria Dumbwaiter Budget Reference
